.nature &climate

The forests, lakes, seas, fields and fells of the north are a treasure trove, where the raw materials that grow and ripen in the unique climate amid the long darkness of winter and the constant light of summer get a completely different flavour: fishes like salmon and vendace, pure grains as rye, oats and first wheat, wild berries, herbs and plants and animals living in nature, to name a few.

.tradition

Many traditional dishes, such as warm smoked salmon, reindeer stew, rye bread, Karelian pie, cinnamon roll and traditional berry jams, are made from fresh ingredients by handicraft following working methods passed down over generations.

But there is always room for innovation that creates new delicacy products and variations.
